Cinnamon Swirl Banana Bread

I had to use some bananas and I was tired of the same old recipe...so here is a new one!



~Recipe~
 3 over-ripe bananas, mashed

1/3 cup melted butter

3/4 cup sugar

1 egg, beaten

1 teaspoons vanilla

1 teaspoons baking soda

pinch of salt

1 1/2 cups flour

Cinnamon Swirl:

1/3 cup sugar

1 tablespoon cinnamon

Preheat oven to 350. Butter and flour a loaf pan.

Mix bananas, butter, sugar, egg, and vanilla together. Add baking soda and salt. Add the flour and combine, but don’t over-mix. 

In a small dish, mix together the 1/3 cup sugar and 1 tablespoon cinnamon.

Add ½ of the batter to the loaf pan and then sprinkle a little over ½ of the cinnamon and sugar mixture all over the batter in the pan. Add the rest of the batter, and then sprinkle the leftover cinnamon and sugar on top. **I did not use the entire amount of cinnamon on the top. It seems to be A LOT!!! **

Bake for 50-60 minutes, or until golden brown on top. Cool, cut and enjoy~

Cheesy Breadsticks

This was a super easy addition to our Italian meal last night.  You can use fresh pizza dough or you can use the pre made in order to save time.  I was baking all day so I added extra time to make the dough.  YUM! I don't know why I have not made these before but the kids want them every night they said!

~Recipe~
1/2 of a basic pizza dough recipe or 1 can or pre made pizza dough
2 Tbsp soft butter
2 cloves crushed
1/4 c parmesan cheese
2 cups shredded mozzarella cheese
*I added red pepper flakes and pepper*

500 degree preheated oven
Mash the softened butter with the garlic*I will be using this concoction on several things in the future*
Roll dough our to fit a cookie sheet or pizza pan, using parchment paper on the bottom.  Slather the yummy garlic butter over dough and sprinkle with the Parmesan cheese then toss the mozzarella on the very top.  Bake for 9-10 minutes, watch the last couple of minutes, it will get really brown if it goes too long.  Cut into sticks and devour the cheesy goodness! YUM! Enjoy~

Banana Bread

This has been with us forever! I love to make it.  When I bake this  I make extra for Britt to take back to college with her.  The recipe is easily converted to muffins as well.
~Recipe~
1 3/4 cup flour
1 1/4 tsp baking powder
1/2 t baking soda
2/3 cup sugar
1/3 cup shortening
2 eggs
2 T milk 1 cup mashed banana

Stir the flour, powder and soda and set aside.  Mix the sugar and shortening with a mixer until light.  Add eggs and milk and beat until smooth.  Add flour mixture and banana alternately to the mixture. Turn the batter into a greased loaf pan and bake at 350 degrees for 60-65 minutes.  If you are making muffins no need to bake so long.  For the topping brush melted butter on the bread towards the end of baking and sprinkle with cinnamon and sugar! YUM! Enjoy~

Snickerdoodle Bread

This is a great breakfast cake.  It does take a while to mix it all up and get it in the oven and then 1 hour to cook but you will not be disappointed!





~Recipe~
2 tsp ground cinnamon
1 Cup white sugar
2 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 Cup butter, softened
1 Cup sugar
1 Cup brown sugar
3 eggs at room temp
2 tsp vanilla
1 Cup full fat sour cream at room temp

In a small bowl mix 1 cup of white sugar and the cinnamon.  Generously grease the inside of a bundt pan.  Gently dust the whole inside of the pan with the cinnamon and sugar mixture, make sure you get all the nooks and crannies.  You will probably use 1/3 c of the total mixture.  Set aside the rest for the bread.  In a mixing bowl combine the flour, salt, baking powder and baking soda.  Set aside.  In an electric mixer beat the softened butter on medium speed for 1 minute.  Add white sugar and beat for 3 minutes.  Scrape the sides of the bowl and add the brown sugar and beat for 2 minutes.  Add the eggs 1 at a time and mix for 1 full minute after each egg. Stir in the vanilla.  Alternately add the flour and sour bream, when all added then mix for 2 minutes.  Spread 1/2 batter into the pan.  Spread the cinnamon and sugar mixture over the top, spread the rest of the batter on top of the cinnamon mixture.  Bake at 325 degrees for 55-65 minutes...Enjoy!

Dinner rolls

These rolls are so easy and very good. They take around 1 hour and you get the fresh bread smell in your house and rolls for dinner! YUM.
~Recipe~
I doubled this so I could freeze some...they did not make it to the freezer! :)
3/4 C milk
4 T butter
3/4 C hot water
4 T sugar
1 t salt
4 - 4 1/2 C flour
1 heaping T yeast

Melt the butter and milk either on stove or microwave.
Preheat your oven to 170 degrees. While the milk and butter is melting, turn on the tap to get your hot water. **Temperature is important to making these rolls rise quickly**  
 Put your milk/butter and hot water in the bottom of the mixing bowl.  Add the sugar and salt. Then add 2 C of the flour...let it mix for 1 minute.
 Add the yeast. Turn the mixer on and add the rest of the flour 1 C at a time.
 You have enough flour when the dough scrapes the side of the bowl clean. Mix on medium speed for 5 minutes. Cover with plastic wrap and let sit for 5 minutes. Coat the inside of a 9 by 13 pan with butter. Spray your counter, or a cutting board with cooking spray. Lay your dough on top of it. Take a sharp knife, spray it with cooking spray and cut your dough into 12 pieces.   Gently round them into balls, and put them in your buttered 9x13 pan.
 Put the pan into your warm 170 degree oven. Let them rise for about 20 minutes or until they have risen about 1 inch above the rim of the pan. Leave your pan in the oven and turn the heat up to 350 degrees. Bake for 15 minutes. This time includes the time it takes the oven to increase in temperature. If your oven takes a long time you may need to increase time...I baked them 25 min while it was heating to 350. Bake until golden brown. Eat! Enjoy~

Banana Bread

I have used this recipe for years. It is Britt's favorite so I make sure I make it when she is home from college and make extra for her to take back with her.
~Recipe~
1 3/4 cup flour
1/3 cups shortening
1 1/4 tsp baking powder
1/2 tsp baking soda
2/3 cups sugar
2 eggs
2Tbsp milk
1 cup mashed bananas
Stir flour, powder, soda together, set aside. Mix sugar and shortening w/ mixer until light. Add eggs and milk and beat until smooth. Add flour mixture and banana alternately to mixture. Turn batter into a lightly greased loaf pan. Bake at 350 degrees for 60-65 min. near the end of baking brush the top with melted butter and top with cinnamon and sugar and continue baking! YUM! Enjoy~

Apple Spice Cake with Brown Sugar Glaze

I found this cake several years ago and make it every Fall.  It is so yummy warm with additional glaze or for dessert with vanilla ice cream or whipped cream. 

  • ~Recipe~
  • Nonstick vegetable oil spray
  • 3 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1 3/4 pounds Granny Smith apples, peeled, cored, coarsely grated
  • 1 1/2 cups (3 sticks) unsalted butter, room temperature
  • 1 1/2 cups sugar
  • 1/2 cup (packed) golden brown sugar
  • 1 teaspoon grated lemon peel
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon fresh lemon juice

Glaze
  • 1/2 cup (packed) golden brown sugar
  • 1/4 cup (1/2 stick) unsalted butter
  • 1/4 cup whipping cream
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon fresh lemon juice
  • 1/4 teaspoon salt


For cake:
Position rack in center of oven and preheat to 325F. Spray 12-cup Bundt pan with nonstick spray. Sift flour and next 6 ingredients into medium bowl. Drain grated apples in strainer. Using hands or kitchen towel, squeeze out excess liquid from apples. Measure 2 cups grated apples.
Using electric mixer, beat butter, both sugars, and lemon peel in large bowl until fluffy. Beat in eggs, 1 at a time. Mix in vanilla and lemon juice. Beat in flour mixture. Mix in grated apples. Transfer batter to prepared pan. Bake cake until tester inserted near center comes out clean, about 1 hour. Cool in pan on rack 20 minutes.
Meanwhile, prepare glaze:
Stir all ingredients in small nonstick skillet over medium-high heat until sugar dissolves and mixture comes to boil. Reduce heat to medium; whisk until glaze is smooth, about 1 minute. Remove from heat. Invert cake onto rack set over baking sheet. Using small skewer, pierce holes all over top of warm cake. Pour glaze over top, allowing it to be absorbed before adding more. Cool cake 30 minutes. Serve warm or at room temperature. Enjoy!

Zucchini Bread

My mom used to make this bread when I was little. It is a comfort food for me.  I usually only make it in the fall and I don't know why...I guess because my mom did.  This year I shredded enough zucchini to freeze for the winter so we can enjoy many recipes.


~Recipe~
3 beaten eggs
1 cup canola oil
2 cup sugar
2 tsp vanilla
3 cups flour
1 tsp soda
2 cups peeled and grated zucchini
3 tsp cinnamon
Grease 2 loaf pans
Mix all together and bake at 325 degrees for 1 hour or until tester comes out clean. So easy! Enjoy!

Pumpkin Bread

This bread is so easy and quick. I have used this recipe from Food Network for a couple of years and it is a hit! I made several loaves for new neighbors this week and some to keep here. It is a great breakfast and a great snack. The smells are warm, inviting, cozy and DELISH!
~Recipe~



  • 3 cups sugar
  • 1 cup vegetable oil
  • 4 eggs, lightly bean
  • 16 ounces canned unsweetened pumpkin
  • 3 1/2 cups flour
  • 2 teaspoons salt
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 2/3 cup water
    • Preheat oven to 350 degrees.  Butter and flour 2 9 x 5 loaf pans.  Stir together sugar and oil.  Stir in eggs and pumpkin.  Combine dry ingredients in separate bowl. Add the dry ingredients and the water alternately to the wet mixture. Divide batter between 2 loaf pans and bake for 1 hour or until tester comes out clean.  Let stand 10 minutes and remove to cool completely.
