Chicken Salsa Verde

I found this recipe on the back of a hash brown package! This is so easy and quick to throw together.  I had both teens running in different directions so it fit the bill.  Brooklyn said it was one of her favorites now!
This is definitely NOT a good picture...I had to take it  before the whole pan was gone.  Sorry!

~Recipe~
1 pkg Southwest style hash browns(basically add onions and peppers to the hash browns)
8 ounces of sour cream
4 chicken breasts
ground mesquite seasoning
2/3 cup green  salsa(salsa verde)
shredded cheese
avocado
onion

Heat oven to 400.  Spray a 9x13 pan with cooking spray.  Mix the potatoes and teh sour cream together and place in the bottom of the dish.  Pat the breasts with the mesquite seasoning and place on top of the potatoes.  Cover and bake at 400 degrees for 40 minutes or until chicken is tender.  Pour the salsa over the chicken and top with cheese.  Bake again until the cheese is melted! YUM!  I served with tortillas, queso, chips and fruit! Easy!  Enjoy~

I am back!



Summer was so busy that I found myself throwing things on the grill and not really switching up the menu as I normally do! There were some new things, but not like usual.  I am back! Thanks for being patient! I am making a new recipe tonight.  Mesquite Chicken Salsa Verde.  Quick and easy! With 2 in fall sports in high school I am in need of quick fixes! More to come soon!

Peaches and Cream Cake

Mmmm Mmmm Good!! This is a cake doctor recipe and so easy! It smells great when cooking and looks summery.

~Recipe~

1 box yellow cake mix
1/4 cup flour
1 cup Harvest Peach yogurt from a 2 lb container
1/2 cup water
1/4 cup canola oil
1/2 tsp nutmeg
1/2 tsp ginger
3 eggs

Topping
1 1/2 cups Cool  Whip
1 cup Harvest Peach yogurt
2 cups frozen or fresh peaches

Heat oven to 350 and prepare a 9 x 13 baking pan.  Beat cake mix, flour, 1 cup yogurt, eggs oil, water, ginger and nutmeg for 30 seconds on low and scrape the sides and 2 minutes on medium. Pour into pan.  Bake for 30-35 minutes.  Cool completely.  In a small bowl mix the yogurt and Cool Whip until blended.  Serve cake with a dollop of the cream and fresh peaches! Easy and De-lish! Zeppole

YUM! This is an easy recipe I found in one of my many ripped out magazines.  I served it with fresh cream, raspberries and raspberry jam.  You can substitute any fruit and it would be as good!

~Recipe~

Heat 2 quarts of oil in a large pot to 375 degrees.

Stretch 1 lb purchased pizza dough into portions of a golf ball size and flatten out. Drop the dough into hot oil and fry in batches until puffed and golden brown.  Drain on a rack and dust with powdered sugar.  Serve with whipped cream, jam and berries! YUM and easy! Enjoy~
