Apple Chimichangas

Mmm mmm Good!! These would be good with cherries or peaches a well! A definate keeper! It took a few tries to get the right form of folding so the apples stayed in, so be patient.



~Recipe~
2 lbs Granny Smith apples, peeled, cored and diced
2 Tbsp unsalted butter
1/2 cup light brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
pinch of salt
1 tsp fresh lemon juice
6 inch flour tortillas
Preheat canola oil to 370 degrees in a deep fryer or meduim pot.
Peel, core and dice the apples.  Melt butter in a saute pan over medium heat.  Add the brown sugar and stir until melted and smooth.  Add apples and saute untikl fork neder. Sprinkle with cinnamon, nutmeg and salt and add lemon juice.
Prepare by warming tortillas in the microwave at first to make them easier to work with.  Spoon apple filling into each tortilla and roll into a burrito shape, folding in teh sides.  Secure with toothpicks. Make sure the oil is hot enough and fry the chimis until golden brown and crispy.  Drain on paper towels.  Serve with whipped cream and caramel sauce.  YUM! Enjoy!
