Candied Bananas Foster

I found this recipe in a crock pot cook book...interesting.  I thought it sounded like a fun take on Bananas Foster which I LOVE.  I am not sold on this and think I will stick to the regular recipe of Banans Foster.  It was good...but different. I will definitely make it again, the kids loved it. If oyu make it, let me know your take....
~Recipe~
6 green tipped bananas~peeled and cut into quarters
1/2 cup flaked coconut
1/2 tsp cinnamon
1/2 tsp salt
1/2 dark corn syrup
1/3 cup unsalted butter
1 tsp lemon zest, grated
3 Tbsp lemon juice
1 tsp rum or rum extract
12 slices of pound cake
French vanilla ice cream softened
**I also put whipped cream on top AND I added 1/4 cup of brown sugar in the sauce as well**

Combine bananas and coconut in the crock pot.  In a mixing bowl combine the cinnamon, salt, corn syrup, butter, lemon zest, lemon juice and rum.  Pour over the bananas and cover.  Cook on low for 1-2 hours.  Place a scoop of that vanilla ice cream between 2 slices of pound cake and ladle the bananas over the top and add more sauce if needed. Enjoy~

  1. This looks yummy. I may have to make it, though I'm used to brown sugar instead of corn syrup. Perhaps this is why you didn't love it...?
