BBQ brisket

Being new to Texas, I resisted the whole BBQ thing....I regret that! I LOVE it! I can't get enough of it! Once I gave into Tony's urging...Mmmmm Mmmmmm! I love the smells, the process, the end result the whole idea of Texas BBQ!! Does that mean I am a Texan now? I am sorry I did not get a picture, we were so excited to eat! Next time....
~Recipe~
Get a good cut of brisket, trim some of the fat if there is a lot.... and here we go....
**You can use your own favorite bottled BBQ sauce or you can do the following**
2 1/2 cups ketchup
3/4 cup brown sugar
1 1/2 cups chili sauce
1 1/2 cups red wine vinegar
1 1/2 cups water
3/4 can of beer**or omit this**
3/4 cup lemon juice
1/2 cup prepared mustard
1 Tbsp celery seed
4 Tbsp Worcestershire Sauce
2 Tbsp Soy Sauce
2 cloves garlic, minced
dash of hot sauce or Tabasco sauce
ground black pepper to taste

Marinate the beef in the sauce overnight in the refrigerator, turning several times. Use a fork to make holes in the brisket and spoon on the marinade to go through the meat*Mmm Mmm...good**
Place the whole brisket on the hot grill to sear and brown the rest of the fat. Remove from the grill and put in a foil pan, cover tightly with foil, close hood on grill and cook on low for about 4 hours or until meat is tender(meat should be 170 degrees for medium). Slice the brisket thinly at an angle across the grain. Use remaining sauce that you have heated to 165 degrees, at least so it is thoroughly cooked, and pour over the slices and serve! I serve mine with buns, pickles, onions and sauce...YUM!
