Chicken Cannelloni with Red Pepper Sauce

This is a hit!! Yum! We love Italian and Tony is very selective, being Italian, I am always a little nervous to try new recipes since he grew up with the REAL THING. The recipe takes a little time to put together but it tastes like it takes a lot longer! Try it with garlic bread and salad...It won't let you down!
~Recipe~
1- 8 ounce package manicotti or cannelloni
4 cups chicken, cooked and chopped well
2 8 ounce packages of cream cheese
1 package - 10 ounce- frozen spinach, drained well
1 cup shredded mozzarella cheese
1/2 seasoned bread crumbs
3/4 tsp garlic powder
1 tsp pepper
1/4 tsp red pepper flakes
Cook pasta and drain and set aside.  Stir chicken and the next 6 ingredients until very well mixed. Cut pasta lengthwise and spoon 1/2 cup of mixture in each and  press to seal the sides and place seam side down in a 11 by 17 baking pan. 

Roasted Red Pepper Sauce
2 -7 ounce- jars or roasted rep pepper drained and chopped finely
1 -16 ounce- jar prepared Alfredo sauce
3 ounces grated Parmesan cheese
Mix all together and spoon over the the prepared pasta evenly. Bake uncovered at 350 degrees foor 30 minutes. Add some shredded mozzarella cheese to the top and heat until melted. Enjoy!
