Tomato Vodka Sauce over Pasta

I am not sold on this sauce but the kids and Tony are.  I will make it again just to double check. It takes a while and it smells so good while cooking. I served it over penne but it would be great with any pasta. I served it with cheesy bread, salad and chocolate cake.


~Recipe~


1/4 cup olive oil
1 medium onion**I used 1/2 onion**
3 cloves garlic chopped
1/2 tsp crushed red pepper flakes
1 1/2 tsp dried oregano
1 cup vodka
2 28 ounce cans crushed tomatoes
I Tbsp fresh oregano, chopped
3/4 cup heavy cream
1/2 Parmesan cheese, grated
Heat the olive oil in a large oven proof skillet over medium heat.  Add onions and garlic and cook for 5 minutes until translucent.  Add the red pepper and dried oregano and cook for 1 more minute.  Add the vodka and cook until it is reduced by half. And the tomates and 2 tsp salt and pepper to taste.  Cover pan and place in a 375 degree oven for 1 hour 30 minutes. remove pan from oven and cool for 15 minutes. Place in a blender and puree until smooth and return to original pan.  Reheat sauce and add the oregano and enough cream to make it creamy.  Salt and pepper to taste and simmer for 10 minutes.  And parmesan cheese and toss with pasta. Enjoy!
