My mom made this a couple of years ago for Christmas brunch and we all enjoyed it. I try to make a brunch every weekend day. This is one of my boys favorites. When the kids have friends over it easily feeds all of them. It takes a while to assemble and precook....but the end result is good. ~Recipe~
1 28 ounce frozen hash browns
1/2 tsp garlic salt
1/4 tsp pepper
1 can of cheddar cheese soup
1 pound of bacon, cooked and crumbled
12 eggs lightly beaten with a little 1/2 and 1/2
1 Tbsp butter
2 cups of shredded cheese
Prepare the hash browns according to directions and put in the bottom of a greased 2 1/2 qt baking dish. Top with 1/2 of the bacon and the soup. Scramble the eggs in the butter until almost set**I add a little cheese here to make them a little more fluffy** Spoon the eggs over the soup and bacon and sprinkle with the remaining bacon and cheese. Bake uncovered, for 20-25 minutes at 350 degrees. Enjoy!
