Pulled Chicken Suiza Sandwiches

This quick dinner can be thrown together in no time! Serve with chips or fries and a salad and you are good to go! We all loved it. I used big rolls and they toasted perfectly and this is definitely a 'make again'. It does only serve 4 so you may want to double it.



~Recipe~
1 Tbsp extra virgin olive oil
1 small onion chopped(I used 1/2 of a small onion)
2 garlic cloves, chopped
juice of 1 lime
1 Tbsp honey
1 1/2 cup salsa verde
1/2 - 3/4 cup sour cream
1 rotisserie chicken skinned and shredded
4 rolls for the sandwiches
1 cup shredded cheddar or monterey jack cheese(I used a combo)
Preheat the boiler. In a large skillet, heat the olive oil over medium high heat.  Add the onion and garlic and cook until they are softened. Stir in teh lime juice and honey and then the salsa verde, heat through.  Mix in sour cream. Have the chicken in a pan, keeping warm, and add the sauce . **ADD THE SAUCE A SMALL AMOUNT AT A TIME** Stir it all together and make sure it is warmed through. Spoon the chicken on the rolls and top with cheese and broil until cheese is bubbly. Enjoy!
